How is the roe color determined for dyeing?

Hello! Would anyone happen to understand how the Roe (and Aged Roe) color for dyeing purposes is determined? ObjectDataDefinition::CreateFlavoredRoe suggested to me that each roe would take on its parent fishes' color for dyeing. This is true for dyeing in the Sewing Machine, but not for use in the dye pots. When I took several types of roe to Emily's dye pots, they were only accepted in the orange pots. This made me think that the "Roe" item context tag of "color_orange" in Objects.xnb took precedence for the dye pots.

However! Lava Eel Roe (and Aged Roe) can only be used in the red dye pot. So far, I've only seen this mismatch with Roe/Aged Roe. Wine, Pickles, etc. all act as I expected - they now take on the colors of their parent item. For example, Starfruit Wine is considered yellow, not purple (even though Wine is "color_dark_purple"). So now I'm very confused, and I feel like I'm missing something. Please let me know if it's just my game that's acting weird; I only tested a few items that I already had on my save.
