Upon starting the game, you will be prompted to create your character, being able to choose hair color, eye color, shirt color, name, pet preference, favorite thing and their gender.

The appearance and gender selected at the beginning of the game has no bearing on gameplay.  The only difference between male and female characters is the pronouns characters use when referring to them.  Gender selection doesn't limit who you can romance or any other gameplay content.
