In order to have a chance at a giant crop you must plan cauliflower, melon, or pumpkin in a 3x3 grid (total of 3 seeds) and keep them watered and growing at the same rate.

There is only a small chance for this to happen. To maximize your chances at getting a giant crop, scale you 3x3 grid to expand on the plot, making a large square #x# grid so each set of 9 seeds in a square have their own chance to become giant.
