Note that regular chicken [[egg]]s always produce normal quality [[Mayonnaise]] and [[Large Egg]]s produce gold quality mayonnaise.  [[Duck Mayonnaise]], [[Void Mayonnaise]], and [[Dinosaur Mayonnaise]] are always normal quality.  The quality of the egg is not a factor.

This makes cloth the only artisan good in the game that is actually affected by the quality level of the input.
