In general it is better to ''avoid'' growing crops that have a higher profit in preserves jars because they are inherently less valuable, and recommended to buy/grow fruit with base values greater than 50g or vegetables with values greater than 200g, where the keg becomes more profitable.  When above these base sell prices, it is ''always'' more efficient in the long run to process them in kegs, since kegs only add a delay - but only if the number of kegs you can craft/place can keep up with your crop production.  Since it is common to have difficulty producing enough kegs in the early game to keep up with the incoming supply, it can therefore be beneficial to process some lower-value items with jars to match the incoming supply as closely as possible.  It also may be desired, at times, to process a batch of crops through preserves jars simply for a quicker return during the early game when having more funds sooner could mean better progress in the game overall.  From a min-max perspective it is optimal to avoid preserve jars entirely and focus on keg production with higher-value items, and keeping their processing throughput higher than the amount of crops you can produce.  This can be difficult to execute which is where having some preserve jars as a backup processing method can come in handy.
