You may thought about kegs vs dehydrator, the reality is that on early game, you should buy the recipe and start puting blueberries, cranberries and in general multi harvest crops that would require a ton of kegs or preserved jars instead, this can be a great early source of money, you can get 400 gold per dried blueberries. On end game dehydrator is not recommended except for raisins, because you have the mats for lot of kegs and lot of space to put them, so instead of the 2.1x + 7 you´ll get with dehydrator+artisan you can get a 4.2x with kegs
