Not sure what shirt you started with, or what the circumstances, but I also found the entry for wine in the data file <samp>ObjectContextTags.xnb</samp>; it's listed under its object ID (348), and the strength there is normal. Playing on mobile 1.5, I found a dyeing bug where if you place an item into dye pots and exit the menu before dyeing your item, another of the coloured item gets added to your inventory

*In the sewing machine, this works correctly. All flavoured items do indeed take the colour of their ingredient. The unflavoured versions availble e.g. from travelling cart used the base colour (Jelly - Red, Juice & Pickles - Green, Wine - Purple).

*In the dye pots, flavoured items use their ingredient's colour only if it is earlier in the rainbow than the base colour. E.g. Pickled Pumpkin is (correctly) orange, but Pickled Beet is green when it should be purple. I believe this is a bug and have reported it.
