There are a few topics to cover in regard to starfruit throughout all your gameplay. First, its crucial to complete the vault or buy the bus repair at joja´s on year 1 to get access to a harvest on the first summer, on this early stage you may not be able to keg them or not even jelly them, but dehydrator is a good choice, wood is cheap to buy on year 1 and fire quartz is easily gotten on the mines, making this a great way to make a few hundred thousand on the first summer for lots of stuff.
 +
In regard to money, on the late game it can be the best way to achieve perfection, its high yield of money per space and per time makes it so that only 4000 wine with artisan is needed for golden clock + obelisks, so a 400 kegs, 10-20 iridium sprinklers and a year or so of harvesting and plating on ginger island is an easy fast and safe way to get millions of gold.
 +
To conclude, you may think of aging your wine, this is not usually recommended, if you harverst a really huge amount of starfruit, just age the amount you can and sell the rest, if not you´ll be hoarding wine and not making profit needed for other things (Upgrading tools, buying buildings, etc).
